Wooden Mooncake Press Mold

A paddle of solid wood with flower patterns cut into it as recesses. Press dough in, tap it out, and the carving comes back in relief. There is no spring, no plunger, no plastic collar - it is the older kind of mold, and the only part that can fail is the wood.

It is sold as a mooncake mold and that is what it is best at, but the pattern does not know what is in it. Mung bean cake, snow skin, shortbread, cookie dough, pressed rice, marzipan - anything stiff enough to hold an edge takes the print.

Care

Brush the recesses with a little oil before the first use, or the first cake will stick. Dust with flour between presses. Wipe with a barely damp cloth and dry it immediately - never soak it and never put it in the dishwasher, because a carved recess holds water and swollen wood loses detail.

How many patterns are on one mold?
Several different flowers along the length of the paddle. Which patterns you receive depends on the batch - see the photographs for the range.

What kind of wood?

Do I need to oil it every time?
No, only the first time. After that, flour is enough.

Will the carving wear down?
Slowly, over years of use, and mostly at the high points. Washing it in water will do more damage than using it.
